The Man behind mighty fine

I’m Elliott, the founder and sole baker behind Mighty Fine Pretzel Co.—a one-man soft pretzel bakery rooted in tradition and driven by flavor.

Born and raised in Lancaster, PA, I grew up surrounded by a legacy of centuries-old pretzel makers like Hammond’s, Snyder’s, Herr’s, and Utz. Pretzels were a regular fixture of snackage — my father even had a tin of Snyder’s pretzels beside his Lazy-Boy recliner every day of his life.

In Summer of 2025, I set out to take on a passion project to share my favorite childhood snack with the place I’ve called home for the last 6 years — Portland, Oregon. Pretzels are a quintessential symbol of nostalgia for me and I want to share that feeling with others.

Mighty Fine is committed to staying true to traditional Bavarian flavor profiles & baking methods to provide pretzels that taste like they’ve came straight from Germany.

Every morning before the sun rises, you can find me hand rolling & shaping each individual pretzel with care and intention— Fresh and ready for the masses.
